Healthy Recipe: Chicken Taco Soup

Prep time: 10 minutes 
Cook Time: 5-6 hours

INGREDIENTS
1 can of black beans 
1 can of kidney beans 
2 cans of diced tomatoes, with or without chilies (14 oz each) 
1 can tomato sauce 
2 cups of chicken broth 
8 oz of frozen corn 
2 packets of taco seasoning (low sodium)
3 chicken breasts 
Low fat cheddar cheese (optional)
Fat-free sour cream (optional)
Tortilla chips (optional) 

INSTRUCTIONS
dd all ingredients to the crock pot except the chicken breast. Stir to combine. Place the chicken on top of the mixture and gently press until it is covered. Cook on low 5-6 hours. Remove the chicken and shred with two forks. Add chicken back and continue cooking for at least 20 minutes. Serve topped with low fat cheese, fat free sour cream, or crushed tortilla chips if desired.
